Introduction

This dish is a nice switch to a normal rice, soya & veggies that we always seem to cook up! Give it a try I promise you'll love it! Also this works well with Chicken breasts.

A great dish for kids, the whole dish ends up turning purple!

Number of Servings: 2

Ingredients

1 Cup. Uncooked Uncle Bens Whole Grain Brown Rice
0.5 Cup Yoplait Source Vanilla Yogurt
    1 Cup. Frozen Blueberries
    2 Salmon Fillets
    4 tbsp Balsamic Vinegar
    4 tbsp Honey
    2 tbsp Lemon Juice
1 tbsp Extra Virgin Olive Oil

Directions

Start by cooking the fish how you normally would. I put my Fish in at 375F for 20 minutes with 0.5tbsp of EVOO on each fish.

Start the rice cooking. This is 20 minute rice so make sure you start it at the same time as the fish.

In a small saucepan combine the Balsamic Vinegar, Honey, Lemon Juice and Blueberries and bring to a boil. Reduce heat to very low and boil for 10 mintues.

When everything is cooked, spoon the blueberry mixture over the fish and rice. Mix yogurt into the rice as well, or leave off the the side for dipping.

Each serving contains 1 cup (cooked) rice, and a piece of fish. Remember this can be made with Chicken as well.

Who would have thought? The flavours together were a surprise. I used activia Berry yogurt as that's all I had. So good! I would imagine this would be excellent with Saskatoon berries! - 7/16/20

Interesting recipe. My husband had similar at a restaurant so interested to see this. His was a rice pudding with salmon on top and sprinkled with blueberries. I added some adobo and paprika. My aged balsamic was pretty sweet and I think I would like it less sweet. Husband enjoyed it. - 12/2/16

Loved it! I cooked it for the first time for my wife's birthday and it worked great. It was simple and tasty. A perfect celebratory meal. I used fresh blueberrys that I froze overnight (not sure the freezing really matters), fresh blueberry honey and freshly squeezed lemon juice. - 1/18/12

Loved it. My kids were very suspicious of the blueberry sauce, so they just had the salmon with copious lemon juice. All the more for me and my elder, grown up son! We'll be making this again, for sure. - 9/2/10
