A refreshing and satisfying cold salad, perfect for stuffing into whole wheat pita pockets or topped on rye crackers. This is a great salad to make ahead, as the longer it sits in the fridge, the better it tastes! Ingredients

    1 1/4 Cup Quorn Tenders, cooked and finely diced
    2 ribs celery, finely diced
    1/2 red onion, finely diced
    3 Tbs. light mayonnaise
    1/8 tsp. garlic powder
    1/8 tsp. salt
    1/8 tsp. pepper

Directions

1. Heat the Quorn tenders in the microwave for a couple of minutes, until heated through. Let cool.
2. While Quorn tenders are cooling, finely dice celery and onion, and add to large bowl.
3. Add the spices and mix.
4. Add Quorn tenders and mayonnaise, and mix thoroughly.
5. Cover and refrigerate at least one hour.

    Very Good
    I hate red onion, so don't put it in. This is AMAZING with honey mustard dressing instead of mayo. I leave out the garlic powder and half some purple grapes & throw them in with a few craisins. I also add a TB or so of slivered almonds. OMGeez...delicious over a greed salad! - 6/10/13
