Introduction

An easy low fat and low carb egg salad with no mayo at all! An easy low fat and low carb egg salad with no mayo at all!
Number of Servings: 1

Ingredients

    2 hard-boiled eggs (one yolk can be removed)
    1/3 cup 1% cottage cheese
    salt (seasoned salt is best flavor with egg)
    pepper
    (Add a little dill, Dijon mustard, paprika or other favorite to give this a little more flavor.)

Directions

Hard boil eggs and remove one of the yolks to lower the fat. Chop egg whites and one yolk. Mix in cottage cheese and season to taste. You will have a high-protein, low-fat egg salad in no time.

    this was pretty good i added some dried dill seasoning, and put in between toast and it had a whopping 24 grams of protein for only 228 cals !! very filling and nutritious! highly recommend trying this! - 4/30/09

    I really enjoyed this filling delight! Being a big fan of egg salad I was a bit wary, but wow! I didn't miss the mayo at all and even used non-fat cottage cheese. Adding a pinch of dill gives it a pickle-ish zip. How cool that you can season this however you want-without caloric penalty!! - 5/10/10

    I made this the other day, and there is something about the consistency and blend of tastes that isn't quite right. I did make it to eat on its own, not in a sandwich. I might try it again in a sandwich or wrap to see if it's better that way. - 11/19/08

    Did u use 1% cottage cheese? If you use fat free the texture will not be good like egg salad.

    Sounds delicious. We just boiled 2 dozen eggs to dye for Easter and need a good idea for eating them up! I will also blend the cottage cheese to hide it. (Note: I did some math and the recipe without removing the second yolk is 210 calories). - 4/4/10

    Ok, don't tell my kids! They hate cottage cheese and they ate this recipe! I blended the cottage cheese in a food processor to make it smoother, then added the rest of the ingredients. The kids gobbled it up, and so did I. I also added paprika, and regular salt, and not the seasoned salt. thanks! - 3/15/10

    I won't tell! I will have to give you my cottage cheese pancake recipe that I made for my son when he was little. Same idea...mix it in the blender...add cinnamon, eggs, flour, and they will never know they are eating protein pancakes!!
