Ingredients

    2 cups elbow macaroni or other pasta
    1/2 cup chopped onion
    1/2 cup nonfat evaporated milk
    1 egg
    1/4 tsp. black pepper
    1-1/4 cups low-fat cheddar cheese

Directions

Cook pasta per package directions but without salt, then drain and set aside.

Preheat oven to 350 degrees F.

Prepare baking/casserole dish by spraying with nonstick cooking spray.

Saute onions in a pan sprayed with nonstick cooking spray for about 3 minutes. Then combine with the reserved pasta and add the rest of the ingredients. Mix thoroughly and transfer to baking/casserole dish.

Bake at 350 degrees F for 25 minutes or until bubbly. Let stand 10 minutes before serving.

Makes 8 servings

    Sounds great, can't wait to try it, but--where are the tomatoes? It's called Tomato Mac & Cheese but there are no tomatoes in the ingredients...should I just add a can...? - 12/28/11

    I used whole wheat elbows, canned diced tomatoes, and fat free kraft shredded cheddar. I baked mine with a light panko breadcrumb topping and baked chicken. It was really good. I understand it is supposed to be low sodium, but I did need to add a little bit of sea salt for flavor. I will make again! - 1/17/10

    I really enjoyed this recipe. My husband loved it too! I mixed in 15 oz diced tomato and herbs. I will try adding garlic to it next time! - 7/10/10

    It would be so much better off a recipe if you would have Included tomatoes. In this fast growing market, you HAVE to stand up and be noticed, and that means creating recipes that others haven't thought about writing in "ink" - 8/7/15

    I use to have a mac and cheese recipe that included tomato. Cook mac and poor off water, mix in grated cheese, cook mac in oven, maybe 350 degrees, slice fresh tomatoes on top, layer grated cheese on top, bake in oven long enough to melt cheese and cook tomatoes a little. It was very good.

    Very Good
    This is a good option for a low sodium meal. It needed a little more flavor so I sprinkled on a bit of sea salt. I topped it with a sliced tomato & a sprinkle of paprika before baking. I think the 2% milk cheese I used was still too fatty to make this a low fat dish. Fat free cheese might be better. - 5/28/09

    Was confused on when to add the tomato and what kind and also the 2 cups cooked was not enough to fee 8 so wasnt sure if 2 cups uncooked or cooked I adjusted as needed and will recalculate for correct nutrients otherwise looked good and did have a nice creamy taste - 9/12/08

    Incredible!
    This is the first GOOD low fat, low sodium mac and cheese I have ever made. Very flavorful and most importantly to me, definitely a "comfort food", just like mac and cheese should be. Couldn't figure out the tomato part though, so I served it with stewed tomatoes. - 3/10/08
