On the go way to have a hot healthy breakfast. Excellent way to use up over ripe bananas and therefore not have to add sugar to this recipe. Ingredients

Pam Cooking Spray
1 large egg
1 medium (ripe) banana
flavor optional recipe calc. with dash vanilla extract
Other options:
cinnamon
cardamon
cocoa powder
Directions
Spray a 1 cup custard bowl with Pam. Break in one large egg and gently whip with fork. Take one medium ripe banana and break into pieces and smash them into the egg. This doesn't need to be completely mixed. Optional to add flavoring - it will just need a dash of either vanilla extract, cinnamon powder, cardamon (what I used today)... for a dessert use cocoa powder and slice strawberries over the top!
Place in microwave for 4 minutes at 70% power - or 3 minutes full power and stop in mid cycle for a moment.
The dish washes up super easy and you can slide it on to a napkin for breakfast on the run.

Made this with 2 egg whites, vanilla, cinnamon and cardamon. The flavor was sweet and pleasing. Great use of over ripe bananas. It's not pretty to look at but a great low fat, naturally sweet treat morning or any time! I would make it again. - 11/5/11

Thanks for the egg white concept...I whipped them with my bamix, really improved the texture.
