Introduction

A luscious but inexpensive meal A luscious but inexpensive meal
Number of Servings: 3

Ingredients

    1 tablespoon olive oil
    1/2 cup diced raw onion
    3/4 lb. diced raw lamb (can be other meat, chicken or none depending on your taste)
    1 14 oz can petite diced tomatoes (with garlic is good)
    1 14.5 oz can low sodium low fat chicken broth
    1 cup Israeli couscous (or other form of couscous)
    seasonings like curry powder, cumin, chinese five spice, minced garlic to your taste.

Directions

Place olive oil in good sized deep frying pan on medium heat.
Put onion, meat (if used), then spices in pan, and saute together for about 5 minutes. (Meat can be slightly pink as it will cook further.)
Add chicken broth and cover and simmer for five minutes.
Stir in diced tomatoes and simmer for another fifteen minutes.
Stir in uncooked couscous, cover and simmer for length of time required to cook couscous as listed on package (Israeli couscous takes 8-10 minutes and Middle East packages take 5 minutes.)
Enjoy!

This is a great potluck and can be served cold or warm.

    Very Good
    OMG! This was Deliscious and very easy to make. I used skinless chicken thighs in place of lamb and added garlic & about 1 cup of fresh, chopped spinach about 6 or 7 min before adding the couscous. (so nutritional Info is gonna be off)

    I had just about given up on couscous when I found this recipe. The kids all liked it, and it had a nice flavor. I used the garlic tomatoes and added another clove of chopped garlic, along with a little cumin. Added chicken. - 3/27/09

    I didnt have tomatoes when I made it, Dont skip the Tomatoes... it needed them. Otherwise quite good with extra garlic. - 7/30/07

    I'm not a couscous fan, but we added LOTS of garlic and spices and it turned out pretty good! Even my daughter liked it! Next time I'd add veggies and you'd have a very easy, one dish meal. Thanks!

    Sounds terrific. I'd add some veggies, like peppers, zucchini, and carrots, right before I put in the broth. If you put in enough, you could probably stretch this to four servings, with each serving having fewer calories. - 4/23/07

    Incredible!
    Wow! This was very easy to make (and I could do other tasks while making it) and I only had to dirty one dish to make it. Not only that, but it was tasty. I think the leftovers were even better. - 4/21/07
