My family loves these! I am a breakfast lover and have made a lot of recipes, but this one is our favorite! My family loves these! I am a breakfast lover and have made a lot of recipes, but this one is our favorite!Number of Servings: 16
Ingredients

1 3/4 c. whole wheat flour
1/4 c, oats
1/4 c. flax seed meal
1/4 c. wheat germ
4 tsp. baking powder
1/4 tsp. salt
1 egg
2 egg whites
1 3/4 milk
1/2 c. applesauce
1 tsp. vanilla extract
Directions
Mix dry ingredients. Mix wet ingredients and combine dry with wet until smooth. Cook waffles in a lightly greased preheated waffle iron according to manufacturers insturctions. (I use 1/4 c. waffle grid. Serve with syrup, cut up fruit, applesauce or yogurt on top. Makes 16 squares.

if I don't have flax seed, what can I substitute with it? - 2/18/10

You can substitute oat bran, wheat bran, wheat germ, or if you don't have any of that just substitute it with more whole wheat flour. I have mixed and matched as needed and they still have turned out great.

These are the best waffles I have ever tasted. I didn't have wheat germ on hand so I subbed soy flour for that ingredient and cinnamon for the vanilla. A little extra protein doesn't hurt a vegetarian any! Anyway, they were delicious and I've made a load up in the freezer; they re-toast beautifully. - 1/5/09

Horray! I am so tired of whole grain, boxed frozen waffles that look good and taste "yucky". You don't specify sweetened or unsweetened applesauce; I have found unsweetened to be great. LeRoux Creek Applesauce, made in Colorado is especially great - and no I'm not related to the company. :-) - 7/22/09

I usually do use unsweetened (unless I'm in a pinch). Glad you liked them and I will have to try that brand of applesauce (I don't know if it is in the store here.)
