Ingredients

    2 cloves garlic, chopped
    1 whole sweet onion, chopped
    2 medium zucchini, sliced
    1 14oz package of pasta
    4 whole tomatoes, chopped
    1 cup cream
    1 cup Parmesan, grated
    2 sprigs Basil, chopped
    Salt & pepper

Directions

Saute onion & garlic in a little olive oil until tender. Place in the bottom of 9 x 13 pan. Layer with zucchini slices, then the cooked and drained pasta. Top with the tomatoes.

Bake at 450 degrees for 20 minutes. Remove, add the cream and Parmesan and bake for another 15-20 minutes.

    Delicious! I didn't have fresh tomatoes or cream on hand, so substituted a can of chopped tomatoes with Italian seasonings for fresh and cream of mushroom soup (low sodium) watered down to the consistency of cream. The casserole turned out fabulous! - 9/14/09

    Very Good
    My daughter even liked this one and it was pretty easy I am noticing a trend, I did however use mushroom soup and the healthy request soup and that was alright but next time I will try the cream for sure. - 1/19/11

    Incredible!
    I used 2 cups of cream instead of 1 and shredded parm instead of grated since that's what I had on hand. Very delicious!

    The casserole seemed really dry when I pulled it out of the oven, so I ended up added 2 cups of cream instead of one. I imagine this made it less healt
