Ingredients

    1 and 1/4 cups whole wheat flour
    9 teaspoons of artificial sweetener (should equal a little over 2 Tbsp of real sugar)
    2 tsp baking powder
    1/2 tsp salt
    1 beaten egg
    1 cup skim milk
    2 Tbsp applesauce

Directions

Mix all ingredients and cook on hot skillet.

    Haven't made these, but for those of you worried about the fiber content it should probably read something like 4.8g of dietary fiber; if you look under ingredient detail wheat flour, white is listed not whole wheat flour which would explain the contradiction - 3/9/09

    I made the pancakes and am eating right now. The recipe is fantastic! Oh, I'm vegetarian so...I used egg replacer instead of eggs, vanilla soy milk instead of skim milk and brown sugar instead of artificial sweetener - 9/21/08

    I added some mixed berries to the batter, and topped it with berries. I loved the sweet taste of the batter. It was a little thick but even my boyfriend approved! - 2/15/09

    This was our first attempt at pancakes from scratch and they turned out pretty good. The kids liked them a lot! I switched it up a little by adding some oatmeal and bananas. I also used soy milk. - 3/16/09

    Yum! I replaced 1/4 c of the ww flour with almond flour, used 1 T of regular sugar and increased the baking powder to 1T. I also added fresh blueberries. The pancakes were fluffy and filling! Next time I'll double the recipe and keep extras in the freezer for before-school breakfast! - 11/2/13

    These were so yummy and satisfying! I modified the recipe slightly adding a teaspoon of pure vanilla extract, frozen blueberries, a half teaspoon Saigon cinnamon and a quarter cup of flax meal. Served with warm unsweetened applesauce. - 4/22/12

    These were really good tasting! I added some sugar and cinnamon blend to the batter. I ended up ruining them by pouring sugar free syrup on them. And let me just say that some things cant be substituted. Will def make again but wont ruin with sf syrup. - 2/2/11

    These were just got good. The batter was WAY too thick, even when I added extra milk and they were not fluffy like pancakes at all. The thickness makes them cook unevenly and they come out like incredibly dense whole wheat bread, not pancakes. Even my husband, who will eat anything, hated these :( - 11/24/09

    There is pectin in the applesauce, so these are a good occasional and definitely better than the mix variety. Also being forgiving of alterations, you can add your own fiberous offerings to your meal. One recipe I am keeping! - 3/20/09
