Ingredients

    6 large hard-boiled eggs
    3 T fat free mayonnaise
    1 t Dijon mustard
    1/4 t black pepper
    1 t dill pickle, chopped fine
    1 t pickle juice
    1 T celery, chopped fine
    1 T parsley, chopped


Tips

Use light mayonnaise if you prefer that, or swap sour cream for the mayo. Her serving size is two halves, which will make a satisfying afternoon snack!

If you want to lower the calories even more, only mash four of the egg yolks. You'll save 20 calories and a gram of fat.


Directions

Cut each egg in half and remove yolks, placing them in a large bowl. Using a fork, mash the yolks until they are small, uniform, and granular. Then add the remaining ingredients. Stir to combine, and scoop or pipe with a piping bag back in to egg halves. Enjoy!

    great, easier way is to put the ingredients in a baggie and mash them and mix them together, using your fingers. Cut a corner off the bag and use like a pastry cookie filler and fill each egg. Less messier. - 12/29/09

    Great recipe. Here is a hint for peeling the boiled eggs to making deviled eggs: use older eggs, not fresh eggs. I was a science fair judge and a young lad did a scientific experiment on this. Something to do with the inner membrane letting go of the shell as the egg ages. He was correct! - 4/4/10

    For incredible texture, press the yolks through a strainer (I use a fine mesh tea strainer.) The filling will be wonderfully smooth and fluffy. To make this a more special adult treat, sprinkle with smoked paprika or cayenne. Also, you can top these with a few capers. - 12/29/09

    You can also reduce calories even further by using half low fat sour cream with mayonnaise. I use this always for chicken salad, tuna salad. My daughter says she cant tell the difference. - 4/4/10

    Similar to my recipe. My family loves deviled eggs, but doesn't like the chopped "veggies" so I use a little celery salt, garlic, dill weed and the pickle juice, with a sprinkle of paprika or cayenne on top! Don't have dill pickle juice? Soak dill weed in a tsp of vinegar for a bit - 4/4/10

    Hint to cooking the HB eggs. Take the a pin and pierce the end of the eggs befor putting them in the water. Bring to a boil for 1 minute, cover, turn off the heat and let cool. - 3/16/11

    I've made Deviled Eggs this way forever. For a slightly higher cal and fat variation I sometimes crisp microwave a couple of slices of bacon. Then crumble and add to the mixture. - 12/1/10

    I usually use no sugar added sweet relish, but I get clogs if I try to pipe. I like the idea of pushing yolk through a tea trainer.... Maybe I could give the relish a few pulses in the food processor before adding? - 1/23/11

    I love this recipe! Only difference is that I use my own homemade olive oil mayo instead of fat free. It's healthier, tastier, and has less calories. It also gives some healthy fat too. The recipe is shared on SP...Only thing is, you really have to love the taste of extra virgin olive oil. YUM! - 4/5/10

    I would probably use half Greek yogurt and half low fat mayo. That is what I use when making tuna salad and nobody ever complaint. I love the idea of pickle juice. I definitely will keep this recipe. - 4/4/10

    I love deviled eggs and have made them since 7th grade home ec class!!! (1954)! I use Miracle Whip in place of mayonase and 4/1 cup sweet pickle relish in place of dill pickle! Also, sprinkle the tops with paprika! Delicious!!! - 4/4/10

    I love devil's eggs. You can always vary the filling a little.
    When I use mayonnaise, I do it myself with a good oil. Like this I have no preservatives or whatever chemicals in my meal (which there is in ready made stuff).
