Ingredients

4 fresh banana peppers
2 slices cooked bacon
1 plum tomato, diced
3 ounces smoked Gouda cheese, diced
1 tablespoon chopped parsley
1/2 cup panko* (Japanese breadcrumbs)
*You can substitute regular breadcrumbs if need be.
Tips
Serve these as an appetizer or unexpected side dish at your next barbecue!
Directions
Preheat a grill to medium heat.
Wash the peppers and cut off the stems.
Using a small spoon or vegetable peeler, scoop out the seeds.
Combine the remaining ingredients and stuff them into the peppers. Wrap each pepper in a piece of aluminum foil, taking care to cover the tops tightly.
Place the foil packets on the grill so they stand upright, which will keep the filling inside the peppers.
Cook with grill lid closed for 10 minutes.
Serve immediately.

Loved, loved, loved this! My husband didn't want to grill so I cooked them in the oven at 400 degrees for about 20 minutes and they came out so delicous. I used smoked gouda cheese, turkey bacon (I prefer real but that's all I had on hand), and regular Italian bread crumbs. Will make again and again - 12/15/09

Very good recipe. No bacon added. Yummy! I thought I could get away with just tightly wrapping the peppers in foil and laying them on their side to broil in the oven, but I ended up making a big mess. That cheese bubbled right out! Pay attention when the directions say cook standing up!!! :) - 9/7/10

Great! I used 4 lge Pablano peppers, 3 strips of bacon and 4 wdgs of laughg cow crm cheese, med tomato,3/4 panko crumbs. extremely hot, leftovers were hotter! Too much for me but I served with bulgur & brown rice mix. Next time I will use yellow/orge bell pepper for the size w/ banana pepper chips - 7/12/10

WOW! I baked 'em in a muffin tin, variety of fresh peppers from garden, 1 to 3 peppers to a "muffin" - they baked well at 350- 40 minutes. I see a number of variations and I will sure try using a low fat sharp cheddar next time- then who knows after that! Many possibilities, and me w/many peppers! - 6/22/11
