Introduction

This is a fast, easy, and flavorful rendition of a favored food - meat loaf. You buy cheap and common ingredients to prepare a healthy main dish. I generally serve this with a side of steamed broccoli, green beans or mixed veggies.

Number of Servings: 8

Ingredients

    2lbs Ground turkey (I choose Jennie-O extra lean)
    1-pkg Stove Top Stuffing Mix (I choose the herb blend)
    1 Large Egg
    1/2c. Water, tap
    1/4c. Ketchup

Directions

Preheat oven to 350 degrees.

Mix all the ingredients, but omit 1/8c. Ketchup.

Form into a loaf and place in a glass baking dish (make sure there is enough room around edges). Glaze top with remaining ketchup.

Bake 350 degrees for 45-55 minutes. Inside should be 165+ degrees before serving.

    My family loved this! I will NEVER make another meatloaf with ground beef again. I made a few substitutions for this because I only had Italian seasoned bread crumbs and no Stove Top Stuffing. I used 2/3 cups of bread crumbs and also added about a 1/4 up of diced onion. It came out so tender! - 1/5/14

    Great recipe! Made this tonight and got the thumbs up from the whole family. Serving size is quite large and filling. The only addition that I made was to add a little garlic salt and ground pepper and a few shakes of Worcestershire sauce. We will be adding this to our regular rotation. - 3/6/11

    This was my first time using turkey for a meatloaf and I expected it to be bad, but this recipe made it amazing! My family actually said they would choose this over the old unhealthy version! I did replace the ketchup with BBQ sauce for a little extra flavor. - 1/22/13

    This was the first recipe I used from this web site and it's amazing! My whole family loved it. I loved the idea to use stuffing, very original, at least I've never heard of it before.     I found that I could make this without egg and it held together very well. I think this recipe is a great base and really lends itself to experiment. For example, I used less condiments added sundried tomatoes. Next time, I'll whip up some beans to make it more filling and hearty! - 10/13/10
