Ingredients

    2 Chicken breast, bone and skin removed
    1/4 cup Ken's Steak House, Greek with Imported Olive Oil Salad Dressing
    1/2 tsp Mrs. Dash Garlic and Herb blend
    15 jumbo black olives, drained
    4 oz canned mushrooms, drained
    15.5 oz can cut green beans
    Bread Crumbs - Italian Style (about 1/8 cup)

Directions

Marinate two chicken breast halves in about 1/4 cup Ken's Greek Salad Dressing. (I use Ken's because I can't find any other Greek dressings out there). Marinate breasts for two to three hours for best flavor.

Pour chicken and marinade into an appropriately sized baking dish. (Mine is 8 by 8).

Sprinkle Mrs. Dash over chicken.

Arrange mushrooms, olives, green beans, and bread crumbs over chicken.

Bake at 350 degrees for 30 minutes, or until juices run clear.

Serve over brown rice (calories not calculated).

    Very good. Left out the mushrooms, since hubby won't eat them. Instead of Ken's dressing, made my own with Greek seasoning and olive oil and vinegar. Will definitely make again. - 2/10/10

    A great way to put a spin on chicken (which I get sick of). I added some mozzarella on top. Quite yummy. This will become a regular dish in my home. - 10/22/09

    Moist and yummy. Didn't use green beans or mushrooms but instead used sliced onions and sun dried tomatoes. May add bell peppers too next time. - 3/17/11
