Introduction

Sandwiches so good, you'll think someone brought home takeout from your neighborhood deli! Sandwiches so good, you'll think someone brought home takeout from your neighborhood deli!
Number of Servings: 4

Ingredients

Tips

Forget grabbing deli sandwiches on the way home from work. You can feed a family of four gourmet, healthy roast beef sandwiches, complete with sweet caramelized onions and creamy bleu cheese dressing, for about $8. That's $2 a sandwich--just try to spend that little at a deli!

Serve with a piece of fruit and a cup of skim milk, and you've got a healthy dinner in no time flat.

You'll still have four servings of roast left. Use them to make Chef Meg's Vegetable Beef Soup. These sandwiches can be eaten hot or cold. Try toasting the sandwich thins for added texture.

Directions

Prepare the blue cheese sauce by gently combining the blue cheese and Greek yogurt. Layer between the bread the lettuce, beef, onions, and dressing.

LOVED this recipe. Do not be afraid of the blue cheese sauce - it is the perfect addition to this sandwich. My husband ate his without the blue cheese but agreed after trying mine that it is better with the sauce. Why eat out when you can have this?! Wonderful! - 1/8/10

As pictured, these rolls, are not the Arnolds sandwich thins you include in the recipe. This problem I understand from business wanting to sell their product, why mislead us here? Sub out the thins for reg. burger rolls abnd the #'s will go through the roof, especially the sodium... : ( - 3/28/12

Substitute Pepperidge Farm "Very Thin Whole Wheat Bread" for the sandwich thins and save another 26 calories. (2 slices are only 74 calories) - 6/27/11

This recipe is right up my alley . . . but I am saddened by the photo. It shows a regular, thoough maybe lower calorie, bun, not a sandwich thin. - 3/13/12

I heated the beef and onions and added some horseradish to the sauce. I used sliced roast beef from Trader Joe's and a 2 oz (80 calorie) serving was plenty. Also used nonfat Greek yogurt. - 9/30/11

Once again the picture doesn't match the recipe, unless sandwich thins got bigger and look like regular buns. - 10/12/12

Just made this for lunch today. Outstanding. The only thing I will do differently is add tomato slices. Wonderful flavor and two onces of meat is plenty. We will be having this again, soon. Thank you Chef Meg. - 10/18/13

This is a really fantastic lunch, the blue cheese spread is SO good!

I used arugula as my greens instead of lettuce and it added a nice little bit of extra spiciness.

Also, today I heated the sandwich up for 20 seconds in the microwave, it made it a little gooey and warm and was great!

    YUM!

I don't like blue cheese, but this was great. I did use a bread thin instead, which was no problem for me as I don't eat bread much and a full bun would have killed me. - 9/9/18

I am not a blue cheese fan, so this rating is from my husband. I made a sandwich for him to take in his lunch. He loved it. He does agree with some of the postings below that a jalapeno pepper might be a good addition. I also liked the idea about adding some horseradish to the sauce. - 10/13/12

Fabulous! I made mine on whole wheat pita bread instead of a bun because I forgot to grab the sandwich thins at the store. Still great - although probably had more calories. This recipe screams potato chips as a side ... it would be nice to find a good home-made potato chip recipe. - 5/22/12
