Ingredients

    1 20-oz. Can Pineapple, Crushed, Undrained
    1 1-oz. Box Instant Pistachio Pudding, Sugar-Free
    1 8-oz Tub Cool Whip Lite, Thawed
    Miniature Marshmallows, Rinsed (optional)

Directions

In large bowl, mix crushed and undrained pineapple with pistachio pudding until well-incorporated. Add whipped topping and gently fold in with a spatula to keep loft intact. If using marshmallows, put desired quantity in a colander and rinse under cold water for a few seconds to remove anticaking powder that coats the marshmallows, then add marshmallows to pudding mixture, again, folding in gently with a spatula to keep loft of whipped topping intact.

    This is such a favorite for my family-- and is so easy to make!
    However, I never rinse the marshmallows and my dish turns out great. I use sugar free cool whip, about three cups of mini marshmallows for the recipe. Also, I use pineapple tidbits with the juice of the can. Refrigrate overnite.

    Very Good
    substituted pistachio for vanilla... couldn't find any at the store. and i cut up green grapes. i think apples would be good in there too. :) - 12/25/11

    This sounds like so much fun! My 3-year old daughter could help me make this and we could eat it out of my fancy sundae dishes. Out with hot fudge and butterscotch and in with fresh fruits and lite cool whip! Fantastic! I can't wait to make it! Thanx! - 5/29/08

    Add walnuts to this recipe and you have what is called: WATERGATE SALAD. It's an actual dish made during the Watergate scandal. Google it...interesting story. - 5/28/08

    This is delicious even tho I didn't add the marshmallows. I used to take this to all picnics and covered dishes. I just added the cherry halves for color and the marshmallows. - 6/26/07

    I like this one, but for a quick fix you can also try 2 tbsp of cool whip lite and strawberries or bananas. It is something you can do when you dont have much time. - 6/11/07
