Introduction

Very hearty and satisfiying dish that doesn't feel like your eating low calorie. I top it off with fresh chopped Cilantro and fat free cheese or sour cream and a dash of lime juice.Serving size is 1 cup. Ingredients

    3 Boneless Skinless Chicken Breasts
    1 Medium sweet yellow onion, chopped
    2 Cans of Great Northern Beans, rinsed
    2 Cans of Black Beans, rinsed
    2 Cans of Diced Tomatoes with Green Chilies
    3 Tbls. Chili Powder
    2 Tsp. ground Cumin
    3 Cloves of fresh Garlic, chopped finely
    Salt and Pepper to taste

Directions

Use fat free nonstick spray to coat bottom of 8 quart pot.
Brown cubed Chicken breast peices over medium heat until no longer pink. Add chopped onion and garlic to cooked chicken, simmer until onions are soft. Drain and rinse beans in collander, add to chicken.
Add in remaining ingredients, stir thouroughly and simmer on low heat, covered for 45 minutes. Enjoy.

    This is a keeper. I will be doubling/tripling this recipe next time around, like I do many other soup recipes because they're better after freezing. I made it as per the recipe, but ADDED a pkg of my favorite William's Chili Seasoning (original). Healthy, packed with fiber and great taste!! - 1/2/14

    This is very good and the kids liked it too. We made a pot, froze it and put it in our camping cooler and ate it when it thawed out a few days into our trip and it was better than right off the stove. I also added some extra water to thin it out a bit and liked it better. - 8/1/11

    Very good. I made half the recipe, with 9 oz of chicken (doesn't really say how much). I used 1 T regular chili powder and 1 tsp chipotle chili seasoning = just the right amount of kick. I wanted some liquid (so added 1/2 bottle of beer, but I'm sure stock or water would've been fine too). - 3/6/10
