Introduction
A lower-fat version of your favorite creamy broccoli soup. A lower-fat version of your favorite creamy broccoli soup.Ingredients
- 2 tablespoons margarine
- 1/2 cup chopped onion
- 3/4 cup chopped celery
- 2 – 10 oz. packages frozen broccoli – thawed enough to separate
- 2 cups chicken broth (fat free)
- 1 cup nonfat milk
- 1/2 lb. processed reduced fat cheese, cubed (Velveeta)
- salt and pepper to taste
Directions
1. In medium saucepan, heat the margarine. Add onion, celery and cook until wilted.
2. Add broccoli and broth. Quickly bring to a boil. Cover and simmer until broccoli is tender, about 5 minutes.
3.Puree in blender (will need to do in two batches).
4. In the saucepan, stir together the broccoli puree, milk and cheese. Add salt and pepper to taste, and then heat. If the soup is thicker than you like, add more broth or milk and re-season.
Makes 5 servings.

I think it's important we all keep in mind that the presentation of a recipe that includes margarine and processed cheese on SP does not mean that SP advocates a diet full of these foods. These things are fine in very lmtd quantities--might we think of this as an "occasional" instead of "staple"? - 1/26/09

I would rate this as good only because I like my soup to be thicker. I made the soup today for my FIL and added 2 cloves of garlic, and made a roux w/ flour and the nonfat milk. I also don't think you need to use all that Velveeta, as I only used half and you still have a nice cheesy flavor. - 1/26/09

wow, my first try at it and it turned out great.. omitted the margerine and not alot of cheese, added half butter half safflower oil. still thick with 2 cans of stock but thats the way i like it. will add some bacon bits (fake) next time for a more hearty taste. great for these cold mich. days.... - 1/28/09

I made this with the following tweaks: removed about 1/2 of broccoli before pureeing in pot with immersible hand blender. Then added 2 cooked (microwave) boneless, skinless chicken breasts chopped bite-size. Had to thicken with 2 tablespoons cornstarch because I mistakenly usedtwo cans of broth. - 2/2/08

I also can't express how upset I am at on the rude comments. First, we are all in this for a lifetime of health, if that is truly the key...then this can fit in a healthy eats plan.
