Introduction

This is a yummy soup I threw together after Thanksgiving. It's great way to use up the extra turkey! Peas and corn would be a great addition too. I hope you enjoy! Ingredients

    10 C water
    2 t olive oil
    1 C onion, chopped
    2 t garlic, minced
    2 C celery, chopped
    2 C baby carrots, chopped
    15 oz can stewed tomatoes
    8 oz light turkey meat
    2 C green beans, frozen
    2 C Mama's homestyle frozen tortellini
    4 t Vogue Cuisine low sodium Instant VegeBase
    1/2 t salt
    1/2 t pepper




Directions

Before anything else, start by putting the water into a large pot, over med/high heat.

While this is going you will chop your veggies.

Next, in a seperate pan with the olive oil, sautee the onion and garlic for 2 minutes. Add the carrot and celery and sautee for 3 minutes more.

At this point your pot of water should be boiling, if it's not then wait for it to do so.

Add all ingredients to the pot. Bring it back up to a boil and then turn it down to simmer for 10 minutes.

This makes 14, 1 C servings.

    I make this soup as well after Thanksgiving! My boys love it!! I add potatoes and any leftover dinner vegetables. Goes great with fresh baked dinner rolls or crusty bread. - 11/27/12
