Ingredients

    1/2 cup dry instant oatmeal
    3/4-1 cup water
    1/4 cup canned pumpkin (Libby's)
    4 pkts splenda
    1/4 tsp cinnamon
    1/8 tsp ginger
    1/4 tsp vanilla extract

Directions

Put dry oatmeal and water into a bowl (that has plenty of room for the oatmeal to expand with the water). Use more or less water depending on how thick you like your oatmeal (use less if you want it thicker, use more if you like it thinner). Microwave on high for 2 minutes. Stir in splenda, pumpkin, cinnamon, ginger, and vanilla and enjoy!

    This was great! I added the additional ingredients after cooking for 1 minute, then cooked one minute more. I skipped the Splenda (I don't use it) and added 1 tbl. brown sugar. Don't skip the vanilla, it makes a difference! Thanks! (P.S. For the spices I used Pumpkin pie spice instead.) - 1/19/08

    Plenty of taste and fiber. This one's a keeper. i used stevia. A couple of chopped, toasted walnuts or pecans would be good on top. - 7/2/09

    The recipe says to use instant oatmeal but the nutritional breakdown says it uses Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry), (1 serving). So which is correct? There is a big difference in the two kinds. - 3/15/13

    I love doing this overnight in the crockpot. Used some vanilla yogurt after it is cooked in place of Splenda (don't use artificial sweeteners) and the vanilla. make creamy - 7/14/19

    Most of my family including kids really enjoyed this! Most certainly a keeper. My husband thought it was a bit rich which is something since he has a super big sweet tooth. I used pumpkin pie mix so maybe next time I will try pureed pumkin and toasted walnuts would be FAB on this! Great recipe! - 10/11/13

    So yummy! I used quick cook oats instead and threw everything into the water once it boiled. Also used a tsp of agave nectar instead of splenda (i won't touch that stuff). Even my 3 yr old loved it. - 3/15/13

    Great job. I didn't use splenda (not a fan of sweetness in my oatmeal) but I used a crap ton more cinnamon like I like and the vanilla was the right touch. Gonna combine this with a variation I have for creamy banana oatmeal. Should end up tasting like Starbucks' pumpkin spice latte! Happy Halloween - 10/13/12
