Ingredients

    1 tbsp Olive Oil
    1/2 of a small onion
    1 large bunch radishes, diced
    1/4 tsp Thyme, ground
    dash Salt
    dash Pepper, black
    dash Paprika


Directions

For the radishes - dice, shred, whatever - experiment to get it how you want it.

Saute onion in olive oil until soft, then add the radishes. Cook over medium heat until crisp outside, and soft inside, about 8 minutes. Add seasonings near end of cooking time. Sprinkle with paprika just before serving.

Paprika and other seasonings are to your personal taste.

    This turned out very tasty but the radishes were too wet to crisp up very well or stick together when cooked. I think next time I'll dry them off a bit before cooking, but they tasted great. - 1/27/13

    You can also oven roast radishes or saute them like potatoes. Use a bit of reserved duck or chicken fat and some fresh herbs, and it's amazing. - 9/26/10

    A good substitute for hashbrowns. I used less oil so my calories were lower. I tried to eat them plain but the taste was too different for me, so I added ketchup. - 6/9/08
