Ingredients

    5 cups cauliflower, cooked
    16 tbsp fat free mayonnaise
    1/4 cup yellow mustard
    1 tbsp yellow mustard seed
    1/4 cup dill pickles, chopped or diced
    1/4 cup celery, diced
    1/2 cup cucumber (with peel), sliced
    1 cup hard boiled egg, chopped
    1/2 tsp garlic powder

Directions

Cook one head of cauliflower until it is the softness of a boiled potato. Chop and cool in the refrigerator until chilled.
Blend in other ingredients.
Egg can be chopped or you can simply slice one egg to put on top and save 17 calories per serving.
Chop the cucumber about the same size as the celery.
The basic premise behind this recipe is to use your favorite potato salad recipe, but substitue cauliflower for the potato and fat free may for the regular mayo.

    I make this a lot.....Be sure to cook the cauliflower good and drain well...don't want watery salad....I then just use what I normally would for potato salad....
    We think it is great.......and I love Faux Potatoes...

    This is wonderful. Tastes just like potato salad but not as heavy since there are no potatos. It is on my list of summer staples - a great side dish for grilling out. Also, it makes enough to last the week. - 6/16/07

    i didn't add the egg which means it's less calorie. this is really good. it tastes just about like normal potato salad except the texture is just a little different. i'm glad someone found a healthier version on potato salad i can enjoy picnics again!! - 5/30/07

    I made this yesterday. I love cauliflower & potato salad, this was great. I didn't have enough mayo but it was still so good. I ate nothing else for lunch except this. I gave the recipe to my Mom she's diabetic, can't eat a lot of potatoes. She made it the same night & loved it too. Thanks. - 3/28/07

    Interesting enough to give it a try. I believe I will also add some sliced green onions to it. I doubt I will call it "potato" salad. The "mashed potato" cauliflower dish did not fool my husband. - 7/14/09

    I brought this dish to a cook-out and no one liked it. I thought it was just ok, definitely a good healthy concept, but it's just not the same as potato salad! I also didn't cook the cauliflower long enough. - 5/9/07

    This is pretty good! Not everyone's potato salad tastes the same, though, so I had to add some cider vinegar to this for it to work for me. Still, it was not a big winner with my family so I don't think I'll make it again. Cauliflower "mashed potatoes" is also terrific. - 7/9/08

    Another idea is to make sweet potato salad using whatever basic potato salad recipe you like--or this one with that substitution. Of course it will have more calories but also full of highly desirable nutrients. - 10/21/10

    This recipe is DELICIOUS. Sure tastes a lot like Potato salad and it is much healthier. Great filling for a cold Breakfast Burrito or just something to much on when you get the hungries through the course of the day. i know I am going to make it a lot. - 9/2/10

    Consider pulsing the raw cauliflower in food processor until it has the consistency of . . . hmmm. I'm not sure what to give you as an example. Basically pulse it until it is really small and then use it uncooked in the potato salad. I think you'll be pleasantly surprised!!! - 8/30/10

    Fat free mayo is disgusting, I subbed low fat mayo, reduced the amount by half, and used fat free greek (fage)
    yogurt. Pretty good for cauliflower, but it's not potato salad.

    Quite good! I used what I had on hand which was sweet gherkins in place of the dill pickles. Added a little green onion and turmeric. Used less mayo and mustard. Added a bit of salt and pepper for extra seasoning. - 1/22/11

    I have been making this for quite awhile. My family really likes it too. I made it for a baby shower and some people did not realize it was cauliflower!!! I do use my own recipe though!!!     The recipe states it makes 8 servings. So one eighth of recipe equals one serving. Personally I prefer to roast my cauliflower. My potato salad recipe is perfect just the way it is. Taters are good for me. - 10/21/10

    I don't know if there is any benefit to using cauliflower as opposed to potatoes- cooked cauliflower also turns into sugars as do potatoes - 10/21/10
