Ingredients

3 garlic cloves, crushed in a press
1 T extra virgin olive oil
2 t kosher salt
2 t coarsley ground black pepper
12 oz sea bass fillets (cleaned and scaled)
1/3 C white wine vinegar (or white wine)
1/2 C loosely packed presh parsley leaves
lemon wedge to garnish
Directions
Preheat oven to 450. In a cup mix garlic, oil, salt, and pepper. Place fish in a shallow 1 quart glass or ceramic baking dish. Rub fish with oil mixture. Pour wine over fish. Bake fish, uncovered, 15 minutes; sprinkle with parsley and bake 3 minutes lonfer or until opaque thoughout and thickest part of fish flakes easlity when tested with a fork. Drizzle any pan juices over fish and serve with lemon wedges.

I made this for dinner and loved it. I used the vinegar and cracked black pepper and I think the flavours might be a little strong for my kids (who had chicken tonight) so I might back off on those two ingredients if I made it for them, but for me perfections. I'll see how it fars as 4 lunch tom. - 11/26/07
