Ingredients

    Chicken Breast, no skin, 2.5 breast,
    Pineapple, fresh, 2 cup, diced

    Pineapple Juice, .5 cup
    Soy sauce , low sodium, .5 cup
    Pepper, black, 1 tbsp
    Brown Sugar, .3 cup, unpacked

    If you do not have fresh, use canned pineapple and reserve juice.

Directions

Combine pineapple juice, soy sauce, black pepper, and brown sugar in a mixing bowl. Stir until combined.

Place chicken in bottom of slow cooker, cover with pineapples and top with sauce.

Cook on low 6-8 hours. My chicken was frozen so i cooked for 8 hours.

To thicken sauce, remove lid from slow cooker in the last hour of cooking. this will allow steam out and the sauce will thicken and condense slightly. If you prefer a thicker sauce, transfer sauce to pan and boil with flour or cornstarch until reduced to desired thickness.

Serve with stir fried veggies like bell pepper and sugar snap peas or over rice.

    Have made this before,, added green peppers, vidalia onions, sliced carrots, used splenda brown sugar(diabetic) and just added my roux from corn starch in the last half hour,, this is fantastic on brown rice, or if you prefer, french sliced string beans.. - 1/22/10

    Cooking for the "variety" of diets my fam feels works for them has been a challenge. Low carb, Low fat, Gluten free etc...Phew!! I can't keep up. Tonight this meals was a HUGE hit! I made rice & veggies for fam to choose from. The flavor was incredible and the best part was the super easy clean up!! - 3/7/10

    We really liked this. I only used a tsp of pepper and it was plenty. I added some onions and carrots to it and served it on brown rice. We added some sweet chili sauce as we ate and really enjoyed it! - 10/12/11

    My husband really enjoyed this. I think I will try adding the onion and green pepper next time to give it a little more flavor. I also might try adding some corn starch to make the sauce a little more thicker for the rice. I most certainly will try this again! Thanks for the comments! - 2/10/19

    This was pretty tasty. I agree with others, it does feel like something is missing. I used crushed canned pineapple, 2 lbs of chicken, 2 tsps of pepper, used regular teriyaki sauce and skipped the sugar. We served this over rice. Definitely will try again. - 11/8/15

    Wow! I read the comments before I made this and halved the pepper, and it's so, SO good (and there's still PLENTY of peppery kick). This is an easy recipe to make ahead of time and pull out to put over brown rice for a quick dinner. Best thing I've ever made in my slow cooker, hands down. - 9/22/14

    the best thing about this recipe is the minimal preparation time-good flavour considering the amount of work that went in. i also loved how the chicken took on more of a red meant flavour, a special treat for dieters! i agree with some of the other comments that it may have been a bit too peppery - 10/31/11

    Very good. My grown son and I liked this. I did make some changes, however. I only used 1/2 tablespoon of pepper because a whole sounded like too much. So glad I did, it was still pretty peppery.
