Ingredients

    16 oz 93% lean ground beef
    1 can of peas and carrots
    1 can diced tomatoes
    3 large potatoes (peeled and cubed and boiled to tender)
    3 tbsp grated cheese
    1 tbsp butter
    1 tsp salt
    1 cup chopped onion
    1/4 cup beef broth

Directions

Preheat oven to 400. In heated skillet cook ground meat drain and put in a dish to the side. add onions to the same skillet and cook until soft and lighly browned. Add chicken broth and bring to a simmer. Add tomatoes simmer for 3 minutes and than add peas and carrots simmer for another 3 minutes add beef back into skillet and mix everything together. Add to a sprayed cassarole dish. Add butter and salt to the mashed potatoes spread potatoes over the beef and prinkle the grated cheese over potatoes. Bake for 15 minutes or until potatoes are browned. Makes 6 servings. Enjoy!!

    Haven't tried this yet but plan to. I bet you could reduce the calories a bit by using ground turkey instead of beef. I think I might try that! - 1/27/10
