Ingredients

    -1 pound skinless boneless chicken breasts, cut into 1 inch pieces
    -1 20 ounce can pineapple chuncks
    -1/4 cup soy sauce
    -1 cup green onion, cut into pieces
    -1 large green pepper, cut into strips
    -3 TBS honey
    -1 tsp ginger
    -1 tsp garlic (or to taste)

Directions

1.Drain pineapple and set aside the juice.
2.In a saucepan heat juice, soy sauce, honey, ginger, and garlic for about 5 minutes and then add in the chicken and cook for 10 minutes or until chicken is fully cooked.
3.Turn the heat on low and add in the pineapple chunks, simmer for about 5 minutes.
4.Remove from heat, stir and serve.

    I found that all the juice worked if you cook it until it reduces, then I added the chicken, peppers, and onions at the last. Turned out incredible that way. - 5/28/10

    This was delicious. I don't eat peppers but I vary the veggies. Sometimes snow peas or bamboo shoots, a few mushrooms or water chestnuts. - 4/13/18

    I added the green pepper at the same time as the chicken and finished with the green onions. I added some cornstarch to make it thicker. It was really good. the whole family loved it. thanks - 1/5/15

    This sounds good, but the calorie count is actually higher due to the chicken breast being approximately 166 calories per 1/3 of the recipe, not 26 calories as stated in the breakdown for the recipe. I think it is worth trying though. - 2/8/12

    Incredible!
    My entire family enjoyed this recipe! I used sweet yellow onion insead of green onion and cut it into one inch pieces. Added the the peppers and onions with the pineapple to the chicken mixture after it had cooked, then simmered for three minutes. Served over rice. Simple and very good...YUM-O!! - 8/12/11

    Really Good. Used only half of the fruit and crushed instead of chunks. Also used only about 3/4c of juice instead of all and next time will use even less as it was still a bit much.
    It didn't say when to use the pepper so I added it to the sauce and let them cook a bit before adding the meat.

    Made this tonight. I liked the flavor. I agree with TNH about the runniness of the sauce, next time I will use less juice. My wife wasn't fond of the pineapple chunks but she just picked them out. I will also spice this up a little next time, we always add spice to our recipes. - 6/11/10

    making this recipe was so quick/simple. I used a 12oz can of crushed pineapple, it changes the texture. use 3 tblspns grated ginger it makes a big difference. throw in a spicy pepper the heat gives it a great flavor. a tblspn of garlic was enough. Add onions 3 mins after chicken to avoid soggyness. - 1/27/10

    Missing ingredients from the list (garlic and ginger?), and adding all the pineapple juice made it very runny. I omitted the ginger and added 1 tsp minced garlic and it wasn't bad, but next time I would add a quarter cup of the pineapple juice instead of all of it. - 1/26/10

    Great recipe; easy to make. However, garlic and ginger are not listed in the ingredients. I added the veggies after the chicken cooked, even though that is not listed in the directions. I will definitely make this again. - 1/24/10
