Ingredients

    1 T Olive Oil
    1 large onion, minced
    2 medium garlic cloves, minced
    2 C quinoa, rinsed (or purchased pre-rinsed)
    4 C reduced-sodium chicken broth
    1/4 t black pepper
    1/4 t crushed red pepper flakes, optional
    8 C spinach, baby leaves, packed, coarsely chopped
    1 t salt (optional)

Directions

Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic, cook, stirring frequently, until onion is tender. About 3 to 5 minutes.

Add quinoa to skillet, cook, stirring frequently, until quinoa stats to turn golden brown, about 2 minutes.

Add broth, black pepper and red pepper flakes to skillet, bring to a boil. Cover skillet and reduce heat to low and simmer for 13 minutes; stir in spinach. Cover skillet and cook until spinach and quinoa are tender and liquid is absorbed. About 3 to 5 minutes. Season with salt. Yields about 1/2 C per serving.

    I used a cup and half of quinoa, but used 2 c broth and a rotisserie chicken. It was delicious. I also only had 4 c of spinach, and I think I would do the recipe this way again, cause double the spinach, I think, would make that flavor too strong for me. - 10/24/13

    I made this for my lunches at work. I only used 1/2 the quinoa and broth, and used frozen chopped spinach, squeezed out. It was delicious. I will made this again. I think next time I will add a few chopped walnuts for texture. Add some chicken and top with grated parmesan for a great easy meal. - 4/3/13

    I@DANIANI81 you are correct. The serving size is for 8. I cooked this recipe last night and it was delicious. I got the recipe from Weight Watchers website. We can do a "Make Over" of the recipe and correct the servings. Hope that PAIGEJIMMY corrects it. - 6/7/12

    This was very good! I used Swiss chard instead of spinach, and I do wish I'd added some raisins and/or pine nuts as someone else suggested. I wound up adding more spices to liven it up a bit, mostly an herbes des provinces spice mix. It was good, filling, & easy; will definitely make again! Thanks! - 3/22/10

    Because I am a moron! LOL! I was just thinking there was no meat in it. Clearly I'm not a vegetarian or I would have never made that mistake. Do you have any idea of how I can edit the "tag" and remove the vegetarian label? Thanks for catching my mistake! :-)
