Introduction

An aromatic, filling dish that freezes well - I love this risotto but have halved the portion size since my gastric bypass.

Number of Servings: 4

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 2 medium, chopped
    Green Peppers, 1 cup, chopped
    Red Peppers, 1 cup, chopped
    Del Monte Diced Tomatoes, No Salt Added, 1 cup
    Brown Rice, long grain, uncooked, 1/2 cup
    Coriander seed, 1 tsp
    Cumin seed, 1 tsp
    Garlic, 3 cloves, chopped
    Pepper, black, 0.5 tsp
    Aduki beans, canned, 1 cup
    Cilantro, raw, chopped, 2 tbsp
    Water, tap, 1 cup

Directions

Cook the onion and garlic in the oil for 2 minutes, then add the peppers and cook for another 2 minutes. Grind the coriander and cumin roughly with a mortor and pestle and add to the pan. Cook for 2 minute to allow spices to develop, then add the rice, tomatoes and water. Bring to the boil then turn down and simmer until the rice is cooked adding more water if necessary. Add the aduki beans and and coriander and stir through, season with the pepper and serve.

You can use any type of beans in this dish, but aduki beans are a good source of iron if you don't eat meat. If you prefer to use dried beans just rinse 1/2 a cup under clean water and add at the same time as the rice as they don't require soaking overnight like other beans.

    Very good! I did have to add salt for flavor, but it's understandable if you have high blood pressure. Also, I ran out of brown rice, so I had to use white. It still turned out good though!!! - 6/23/10

    Excellent! Tasty, fibrous, and spicy (not hot spicy, but variety spicy). Thanks for introducing me to a new bean. The only "but" I have is that the portions were too big. Even my husband could only finish 3/4 of the serving. Thank you! - 8/26/08
