Introduction
An aromatic, filling dish that freezes well - I love this risotto but have halved the portion size since my gastric bypass.I usually eat it with a small green side salad. An aromatic, filling dish that freezes well - I love this risotto but have halved the portion size since my gastric bypass.

You can use any type of beans in this dish, but aduki beans are a good source of iron if you don't eat meat. If you prefer to use dried beans just rinse 1/2 a cup under clean water and add at the same time as the rice as they don't require soaking overnight like other beans.
