Introduction

My daughter and I threw this together in 45 minutes when our dinner plans were derailed. It turned out to have loads of flavor and was so easy to make. Ingredients

    1 - 15.5 oz. can dark red kidney beans
    1 - 15.5 oz can black beans
    1 - 15 oz. can petite diced tomatoes

    1 - 15.5 oz. can pinto beans, Drained

    1 cup chopped onion
    2 cloves fresh minced garlic
    1 TBSP + 1 tsp ground cumin
    1/2 TBSP chili powder
    2 tsp coarse Kosher salt
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1 TBSP olive oil
    2 TBSP fresh cilantro, chopped

Directions

Saute diced onion and garlic in olive oil until translucent. Add tomatoes, black beans, and kidney beans to pot with their liquid. Drain pinto beans and add to pot. Add all spices except cilantro and simmer for 30 minutes. Stir in cilantro (chopped) just before serving. The cumin measurements are accurate. I added one tbsp AND one tsp to the pot.

Note: This recipe as is makes seven, 1-cup servings.

    I think you have made a hugh mistake in your potassium mg., pinto beans alone are at least 1000 mg potassium per cup, I realize your cutting it but still isn't enough plus the onion and tomatoe. Check it out. thanks - 3/27/10
