Number of Servings: 15

Ingredients

    .25 cup butter or margerine
    .25 cup applesause or baby food prunes
    .5 cup brown sugar
    .5 cup splenda(not the .5 tsp in ingredients list)
    2 Tbs egg whites or 1 egg
    1 tsp vanilla
    1tsp cinnamon
    1cup milk with 1 Tbs lemon juice added to sour the milk
    1cup whole wheat flour 1 cup white flour
    1 tsp baking soda
    .5 tsp salt
    2 cups diced rhubarb
    .25cup brown sugar mixed with cinnamon for topping

Directions

Heat oven to 350 celsius spray a 8x11 inch pan with cooking spray.
In large bowl cream butter and sugars add egg, vanilla. In a separate bowl sift together flours, salt and baking soda, adding alternately with sour milk to the butter sugar mixture until fully mixed. Add rhubarb stir and pour into pan sprinkle top with brown sugar cinnamon mixture and bake 40 min or until a toothpick inserted into center comes out clean. enjoy

    I doubled your ingredients except added 2 cups strawberries instead of 2nd 2cup of rhubarb ... since we grow both of these, I freeze the rubarb and strawberries in two cup pack and we enjoy this cake year round. - 4/13/11

    I will rate this later, and I had buttermilk - needing to be used up; we have not tasted it yet but it made a lovely, aromatic cake. It was the requested dessert of the evening, so thank you, Rose! I also used rhubarb sauce in the place of applesauce - just for my own convenience! - 6/27/09

    Very Good
    It was delicious, though my kids wouldn't eat it with "green stuff" in it. Silly kids! I only had to bake mine for 32 minutes... good thing I checked it early! - 6/5/08

    Incredible!
    This was a perfect blend of sweet & tart. I made it with Splenda brown sugar & whole wheat pastry flour. Yummy!
    PS: I've made it at least 5 times. It's one of my familily's favorites.
