This is a great meal but could be made SO much healthier! Use long grain brown rice instead of instant white, low fat or fat free soups, whole wheat crackers and omit the butter entirely (the crackers will still brown well). This will save you 10 fat grams and about 120 calories per serving!! - 9/21/07

This was so good! I didn't have everything on hand so I subsituted cream of chkn soup for the cheese soup & I used mixed veggies instead of broccoli. I also used brown rice and I lightly sprinkled the top w/ Italian bread crumbs & cheddar cheese intead of the cracker/butter topping. Family loved it! - 7/6/09

This was delicious. I used brown rice, reduced sodium soups and used wheat Ritz crackers. Turned out great, the whole family loved it!! I used a bag of mixed cauliflower and broccoli since that's what I had in the freezer. - 3/30/11

Excellent. I used an additional can of mushroom soup and 4 oz of grated cheddar instead of the cheese soup, and topped with French-fried onions instead of the crackers. - 9/26/07

This casserole was very delicious! I used fresh broccoli and substituted cream of chicken (fat free) for the cheddar cheese soup. I added a little cheddar cheese on top of the casserole after taking it out of the oven. - 6/17/10

We really enjoyed this recipe, but would have preferred that the topping be just the dried crackers rather than mixed with butter - saves on the calories & fat, too :) - 1/13/10

This is a recipe that I have been making for about a year now, I obtained it by a family friend. The only thing I do differently is 2 cans of broccoli cheddar & 1 can of cheddar cheese soup; also instead of crushed crakers on top, I use crushed croutons (more flavorful). - 9/20/07

I topped it with whole-wheat crackers and cheddar cheese. I'm trying to find recipes that make broccoli enjoyable for me (I'm not a fan, but I'm trying to be!), and this one is perfect! My husband loves it. I've made it twice so far. - 5/24/08

Since I don't like mushrooms, and to make it a bit more healthy, I always add plain Greek yogurt. This is really close to a recipe I have been using for years but have not made for quite a while. I will try it again this week. - 3/21/16

I added salt, pepper, onion powder, and garlic powder. I also boiled my chicken instead of cooking it with olive oil- now I have some homemade chicken broth. - 5/25/15

Great recipe. I used string beans instead of broccoli that's what I had on hand. Cream of chicken soup and grated cheddar cheese. Whole wheat ritz. I think I will make it again but get low sodium cream soup and delete butter as many have suggested. It is a good recipe for leftover chicken and veg - 6/4/13

This was just okay, but I went off the recipe, so that could be it. I subbed in two cans of condensed chicken soup because I don't like mushrooms and couldn't find light cheese soup. I also used brown rice and saltines because I had those on hand and sprinkled in grated Parmesan. Skipped butter too. - 5/8/12

I made this tonight. My husband who is a very picky earter, really like it, my granddaughter, asked when I would make it again. I did not use the crackers; I thought that would have been too much for my husband. Next, time I will not fully cook the rice before mixing the ingredient together. - 4/18/12

I was out of brown rice; otherwise would have used it. I used low-fat soups mixed with a cup of organic veggie stock, low sodium crackers. Added pepper. Easy & tasty recipe! (made this again today: used 1 can broc/1 can chicken soup, stirred in 1 cup shredded old cheddar; panko made crunchy top)! - 11/7/11

Very easy to make. Like some others, I used brown rice and left the butter out of the topping. I used 1 can cream of mushroom & 1 can cream of chicken. I was afraid it would be bland, so I seasoned the chicken with Old Bay, which added a nice touch of flavor. - 10/19/11

I do the same thing that ZGirl21 does, if you really want the flavor of the butter on top, use the " I cant believe its not butter" spray-- O calories!! You can also add different veggies or use whole grain pasta instead for different options. 1 of the only healthy meals I get my hubby to eat, lol. - 4/17/11

I made this by cubing and boiling the chicken with the broccoli, rice and cans of Cream of Mushroom/Cream of Celery. I put American cheese on top with the Ritz crackers, margarine, garlic salt, garlic powder, pepper, and grated Parmesan. I would omit the margarine next time. YUM!!!! - 4/15/11

we tried this and found it a little lacking in flavor. We used a mix of brown and wild rice. I think I would use 1/2 can of cream of celery soup next time and add some herbs to ramp up the flavor. It was a very quick meal to make in a hurry! - 12/9/10

We're vegetarian, so I omitted the chicken and replaced it with butter beans. We didn't have cheddar cheese soup. I replaced it with 1.5 c of shredded cheddar & some veggie broth. I omitted the topping to save calories. It turned out great! Next time, I'll try nonfat sour cream instead of broth. - 10/8/10
