Ingredients

***CASSEROLE***
2 cups cooked white rice (6-8 servings)
4 chicken breasts (fresh or frozen)
1 10oz bag frozen broccoli florets, thawed
1 can Cream of Mushroom soup
1 can cheddar cheese soup
***TOPPING***
1/2 stack of ritz crackers, crushed
1/2 stick of butter, melted
Directions
*Makes 8 servings*
***CASSEROLE***
~Cook chicken in skillet with olive oil, cut into bite size chunks
~Cook 6-8 servings of rice according to package directions
~~PREHEAT OVEN TO 350~~
~Mix chicken, rice, thawed broccoli & both soups in a 3qt casserole dish. Cook uncovered about 30 minutes
***TOPPING***
~Mix crushed ritz crackers & melted butter, crumble over casserole & bake about 5 more minutes, until topping starts to brown

This is a great meal but could be made SO much healthier! Use long grain brown rice instead of instant white, low fat or fat free soups, whole wheat crackers and omit the butter entirely (the crackers will still brown well). This will save you 10 fat grams and about 120 calories per serving!! - 9/21/07

This was so good! I didn't have everything on hand so I subsituted cream of chkn soup for the cheese soup & I used mixed veggies instead of broccoli. I also used brown rice and I lightly sprinkled the top w/ Italian bread crumbs & cheddar cheese intead of the cracker/butter topping. Family loved it! - 7/6/09

I used brown rice, reduced salt and fat soups, and put a little cheddar cheese on the top instead of crackers. Remember to season it to taste. I added salt, pepper, onion powder, and garlic powder. I also boiled my chicken instead of cooking it with olive oil- now I have some homemade chicken broth. - 5/25/15

Great recipe. I used string beans instead of broccoli that's what I had on hand. Cream of chicken soup and grated cheddar cheese. Whole wheat ritz. I think I will make it again but get low sodium cream soup and delete butter as many have suggested. It is a good recipe for leftover chicken and veg - 6/4/13

This was just okay, but I went off the recipe, so that could be it. I subbed in two cans of condensed chicken soup because I don't like mushrooms and couldn't find light cheese soup. I also used brown rice and saltines because I had those on hand and sprinkled in grated Parmesan. Skipped butter too. - 5/8/12

I made this tonight. My husband who is a very picky earter, really like it, my granddaughter, asked when I would make it again. I did not use the crackers; I thought that would have been too much for my husband. Next, time I will not fully cook the rice before mixing the ingredient together. - 4/18/12

I was out of brown rice; otherwise would have used it. I used low-fat soups mixed with a cup of organic veggie stock, low sodium crackers. Added pepper. Easy & tasty recipe! I do the same thing that ZGirl21 does, if you really want the flavor of the butter on top, use the " I cant believe its not butter" spray-- O calories!! You can also add different veggies or use whole grain pasta instead for different options. 1 of the only healthy meals I get my hubby to eat,lol. - 4/17/11

We're vegetarian, so I omitted the chicken and replaced it with butter beans. We didn't have cheddar cheese soup. I replaced it with 1.5 c of shredded cheddar & some veggie broth. I omitted the topping to save calories. It turned out great! Next time, I'll try nonfat sour cream instead of broth. - 10/8/10

Delicious and easy to make. I used 4 cup of cooked rice, 2 cans of mushroom soup (no cheese soup), I added 1 cup of each fresh broccoli and cauliflower (I steamed them in the microwave first for a couple minutes), used grouse meat instead of chicken and didn't use the topping at all.
