Ingredients

    brown rice 1 cup cooked
    Skim Milk, 2 cup
    Egg substitute, liquid (Egg Beaters), 1/2 cup
    Granulated Sugar, 1/4 + 1/8 cup
    Salt, 1 dash
    Vanilla Extract, 1/2 tsp
    Cinnamon, ground, 1 tsp

Directions

Place milk, egg, sugar, salt in saucepan. Cook and stir over medium heat until mixture begins to thicken. Stir in the rice and vanilla. Pour mixture into a "pam" sprayed casserole dish. Bake at 325 degrees for 15 minutes. Remove from oven and stir pudding. Sprinkle cinnamon on top and return to oven, baking for 30 more minutes or until pudding thickens.
