Ingredients

1.5 oz raw tuna, chopped in 1/4" dice
1 oz raw tuna, sliced into very thin slices, roughly 1" x 2" x 1/8" thick
6 g (1/2 Tbs) mayo
2 g (1/2 tsp) wasabi paste
3 g (1 Tbs) tempura crumbles*
1 sheet nori
90 grams (scant 1 c.) prepared sushi rice
3 thin cucumber strips, deseeded
*The true calories in the tempura crumbles are difficult to estimate; I assumed the entire weight was fat and substituted an equal weight of oil in the calorie estimator.
Directions
Set aside thinly sliced tuna. In a small bowl, mix CHOPPED tuna, mayo, wasabi paste, and tempura crumbles (deep-fry small amounts of tempura batter until golden, drain well, and store in air-tight container for sushi). Set aside.
Lay sheet of nori on sushi mat (google for sushi making techniques, it's easy!). With damp hands, press the rice onto the nori in a very thin/single grain layer, leaving the top 3/4" inch of nori bare.
On the bottom half of the rice-covered nori, lay the cucumber strips out in a thin strip. Cover with tuna mixture to form an even 1" band. Roll tightly. Lay thin slices of tuna on top to cover.
Cut with sharp wet knife into 8 equal pieces and serve with soy sauce.
