Number of Servings: 4

Ingredients

    2 cups zucchini (chunked)
    2 cups summer squash (or other squash as you prefer, chunked)
    1 whole tomato (chopped)
    1 green pepper (chopped)
    1 red pepper (chopped)
    0.5 cups mushrooms (sliced)
    0.5 lbs bacon (chopped)
    Salt & Pepper to taste


Directions

Place zucchini, squash, peppers, and mushrooms in a pot to cook on medium heat with a lid on. In another pan, cook chopped bacon until fully cooked but still tender. Do not brown the meat. Drain the grease from the bacon and place the meat with the vegetables. Let cook for roughly another 10-15 minutes w/ lid. Once the zucchini is tender, place the tomatoes in and let cook for another 5 minutes with a lid on. Salt and pepper to taste. Makes about 4 two-cup servings.
