Ingredients

    Ingredients:
    20 ounces Organic Valley Ground Chicken
    1 small diced Carrot
    1/2 diced Celery rib
    1/2 Red Bell Pepper, diced
    1/2 cup diced Red Onion
    1/2 cup Mung Beans, lightly chopped
    1 clove minced Garlic
    1 tsp fresh grated Ginger Root
    1 clemintine orange, chopped
    1 tbsp low sodium Soy sauce
    1/2 tsp Sesame Oil
    2 tbsp rice wine vinegar
    hot sauce to taste

    **sauce ingredients**
    1/4 cup smuckers natural chunky peanut butter
    3 tbsp low sodium Soy sauce
    1 crushed Garlic clove
    3 to 4 tbsp water
    1 packet Stevia
    Dried Red Pepper Flakes to taste

    1 head of leaf Romaine, Bib or Iceberg Lettuce

Directions

In a medium pan cook ground chicken. Add vegetables, garlic & ginger root, saute for 1 minute. Add soy sauce, sesame oil, rice wine vinegar, clemintine and hot sauce. Cooking & stirring 10 more minutes.

Combine sauce ingredients in a glass dish, microwave for 1 minute, stir and microwave 1 more minute adding water if necessary.

To serve fill lettuce leafs with meat mixture, drizzle with sauce.
