I scoop out the potatoes and serve in the skins, but I read a recipe posted by someone else who puts measured amounts into a muffin tin - good idea - if you don't care for the skins. Ingredients

    4 c. boiled potato, removed from the potato shell
    save the skins for serving
    1/2 c. reduced fat sour cream
    1/2 c. reduced fat cheddar cheese
    2 Tb. butter
    salt & pepper to taste

    Preheat the oven to 350 degrees. Beat the potatoes until smooth. Add the remaining ingredients to mix in. Spoon the filling into the potato shells. They will be overflowing. Use the colby jack cheese on the top of each potato.

    Bake at 350 for 15 minutes. Raise the oven temperature to 425 degrees and bake another 10 minutes. Cheese should be browned.

Directions

I figured the calories on 8 servings. Weigh your whole potatoes to choose 8 that will provide single-servings or however you want to work it out. If you choose to only use the mixed potatoes in a casserole or muffin tin, lower the calories by 15 per serving.
