Ingredients

1 medium zucchini
2 cups chopped califlower
1/2 green bell pepper diced
2 cups chopped broccoli
1 can mushrooms (4 oz)
1 can tomato sauce (8 oz)
1 can italian style diced tomatoes (14.5 oz)
1 tbs sugar
2 oz each chedder cheese, mozzaralla cheese and pepper jack cheese
2 tbs minced garlic
1/2 cup cottage cheese
2 tbs parmesan cheese grated
Directions
pre-heat oven at 350*
mix tomatoes, tomato sauce, garlic, sugar and italian seasoning in small bowl and set aside.
in a 9x9 cassarole dish (spray with non stick cooking spray) layer zuchinni, 1/2 of the califlower, broccoli, mushrooms, bell pepper and onions. spread pepper jack cheese on top. add half of the sauce on top.
then spread cottage cheese on top.
then spread remainder of veys, mozzeralla cheese and sauce
sprincle parmmesan cheese on top.
cover and cook for 45 min.
remove lid, spread chedder cheese on top, place back in oven and cook for another 15 min or untill cheese is lightly brown and melted well.
makes 6 serving (aprx 1.5 cup cooked)
