This is a great, easy salmon recipe that anyone can make. Ingredients

1 lb fillet Salmon (Alaskan better than farm raised)
1 green zucchini sliced
1 yellow summer squash sliced
1 tomato sliced
salt, pepper and paprika to taste
Lemon juice
1 tbsp extra virgin olive oil
3 garlic cloves finely chopped
3 scallion stems, finely chopped
1/2 tbsp butter
Directions
Wash the salmon fillet and dry with a paper towel. Place in a baking dish. Mix lemon juice, olive oil, spices and spread over the fish.
Layer the sliced zucchini, squash and tomato in fish scale type pattern on top of the marinated fish. Sprinkle with a little bit more black pepper if you like.
Bake at 350 for 30 minutes. Right before you remove the fish, saute the butter with the garlic and scallions lightly (don't burn the garlic or allow it to brown at all!). Top the fish with the garlic, scallion butter mixture and serve with rice or couscous.
