Introduction

Ingredients

    1 Pound Extra Lean Beef Tenderloin - cubed
    1 TBSP Extra Virgin Olive Oil
    1 Large Yellow Onion - Sliced
    1 Package Fresh Sliced White Mushrooms
    1 TBSP Worchestershire Sauce
    2 TBSP Smart Balance Butter
    2 TBSP AP Flour
    1 10.75 oz Canned Condensed Beef Broth
    Salt
    Pepper

Directions

1. Heat Extra Virgin Olive Oil in 10 inch pan over medium-high heat.
2. Add cubed beef tenderloin and onions. Cook until meat is done (160 degrees for medium). This doesn't take long so be careful not to overcook.
3. Remove Meat and Onion from pan. Keep the juices from the onion and meat in the pan.
4. Add butter to juices in pan and melt.
5. Once butter is melted add flour and mix until smooth.
6. Stir in Beef Broth and cook until it thickens - about 2 minutes.
7. Season with salt and pepper to taste
8. Add Mushrooms and return Beef and Onions to pan.
9. Simmer 15-20 minutes. DO NOT BOIL.
10. Add Worchestershire Sauce before you serve.
