Introduction

This is a great comfort food. You could add some green peppers to spice it up a bit or some chili powder. Sometimes I add some frozen peas. Great with a chicken breast and a green salad. Ingredients

    1 tablespoon canola oil (or olive oil)
    2 oz Vermicelli pasta (uncooked)
    1 tablespoon chopped onion
    0.5 cup Uncle Ben's Brown Rice (uncooked)
    1 cup Campbell's low sodium chicken broth
    1.5 cup hot water
    0.5 teaspoons black pepper
    5 teaspoons Kraft Parmesan Cheese

Directions

1. Break vermicelli into small pieces.
2. Saute onion and vermicelli pieces in the oil until golden (2-4 mins)
3. Add rice, broth, water, pepper and bring to a boil.
4. Simmer 20 minutes (until rice is cooked)
5 Fluff with a fork and add parmesan cheese
