Introduction

A nice break from traditional meatloaf. Using muffin pans for this recipe not only is a time saver since they bake in only 30 minutes but, also takes the guess work out of how big a portion you can have. Ingredients

    1 1/2 lb. extra lean ground beef (96%)
    1/2 cup dry bread crumbs, seasoned
    1/2 cup pizza sauce
    1/4 tsp. pepper
    2 cloves garlic, minced
    1 egg
    1/4 cup shredded mozzarella cheese (1 oz.)
    Additional pizza sauce, heated, if desired

Directions

1. Heat oven to 350 degrees. In a large bowl, mix all ingredients except cheese and additional pizza sauce. Press mixture into 12 regular-size muffin cups (cups will be full). Place muffin pan on cookie sheet in oven to catch any spillover.

2. Bake 30 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160 degrees.

3. Sprinkle cheese over each loaf. Bake 1 to 2 minutes longer or until cheese is melted. Serve with pizza sauce.

Makes 6 servings (2 loaves each)
