Ingredients

    1 1/4 cup flour
    3/4 cup sugar
    1/2 cup oat bran
    1 tbsp poppyseeds
    2 tsp baking powder
    1 cup skim milk
    1 large egg
    1/4 cup canola oil (or melted butter, I used oil)
    2 tsp lemon zest
    2 tbsp lemon juice

Directions

Preheat oven to 350*
Grease one loaf pan (9x4 or whatever) with cooking spray, and set aside.
In large bowl, combine flour, sugar, oat bran, baking powder, salt and poppyseeds. Mix thoroughly. In a separate bowl, combine all other ingredients, whisking well. Add wet ingredients to the dry ingredients, only to make sure everything's wet, don't overdo it.
Dump the batter into the loaf pan, and bake for 40-45 minutes on the middle rack of your preheated oven, and once it's golden brown on top and passes the toothpick test, it's ready. Let it cool on a wire rack for 10 minutes in the pan, then remove from pan and let it cool completely. Makes 12 slices, each serving being one slice.
