Ingredients

    1/3 cup seasoned bread crumbs
    1/4 cup almonds, crushed
    1/2 cup low-fat buttermilk
    4 4-oz. fillets of Mahi Mahi
    1 lemon, cut in quarters

Directions

Preheat oven to 400 degrees F
In a blender or food processor, process together the bread crumbs and almonds till fine. Pour onto a dinner plate.
Pour the buttermilk into a bowl and dip in the fish fillets, one at a time. Then press the fish into the bread-crumb mixture.
Place the coated fish in a lightly greased baking pan. Book fish for about 10 minutes or until fish flakes when tested with a fork. Serve with a lemon wedge.
