Ingredients

A whole wheat tortilla
2 tablespoons fat-free ricotta cheese
1/2 cup fresh spinach
3 tablespoons sun dried tomatoes
3 tablespoons fresh broccoli florets, cut small
1 clove of roasted garlic
3 tablespoons low-fat shredded cheese
Directions
Spread the ricotta on the whole wheat tortilla. Layer veggies. Dice the roasted garlic and add on top of veggies.
If desired, season with Mrs. Dash or another salt-free spice. Sprinkle shredded cheese on top.
Bake in a toaster oven for 5 minutes at 425 F, or until cheese melts and turns golden brown.
Slice into sections and enjoy!
