Introduction

I wanted a change so I used sliced potatoes instead of pasta! I wanted a change so I used sliced potatoes instead of pasta!
Number of Servings: 6

Ingredients

    1lb 9oz Yukon Gold Potatoes
    1 medium size eggplant
    1 medium size onion
    3 cups of no salt added tomatoes - drained and blended some (or use tomato sauce but change nutritional)
    3 cloves of garlic
    12 oz of mozzarella (I used pre-sliced)
    6 oz ricotta cheese
    1 bag of fresh spinach (about 9 oz)
    Any spices you might like

Directions

Blend tomatoes slightly and add ricotta cheese, garlic and spices and stir
Using a mandolin slice potatoes, onions, and eggplant
Using a cake pan (13x9) put foil down and spray
Put the slices of eggplant on the bottom, will soak up the juices and get the flavor
Pour the tomato mixture over the eggplant then put 2 layers of potatoes then onions and spinach.
Put cheese on top and repeat the layers.

This is a lot for one serving and be careful when cooking because it fills the pan!

Cook for 1 hour covered and then 15 minutes uncovered!
