Ingredients

3/4 lb boneless, skinless chicken breast
1 can organic black beans (drained)
1 can organic diced tomatoes- no salt added
3 tbsp minced dried onion
1/2 tsp crushed red pepper
1 tsp garlic powder
2 wedges Laughing Cow Light Swiss cheese
2 tsp Wylers Instant Chicken Broth - No Sodium
10 Tumaros Low in Carbs Multi-Grain Tortilla (94% fat free)
1 c Kraft Natural shredded cheddar
Directions
Preheat oven to 375
Mix Wylers instant chicken broth with 2 cups hot water, pour over raw chicken - Bake for 20-30 mins until chicken is cooked.
Allow chicken to cool and tear into pieces
Combine cooked chicken with black beans, tomatoes, swiss cheese wedges, garlic, minced onions, and crushed red pepper - cook over medium heat until all ingredients are mixed
Spoon into tortillas and roll to close
Spread thin layer of cheese over tortillas and bake for 8-10 mins or until cheese is melted
Makes 10 servings (1 enchilada)
