Introduction

My version of red beans and rice. My version of red beans and rice.
Number of Servings: 8

Ingredients

    1 lb dried red beans
    1 quart water
    4 tbs better than bouillon beef base
    2 tbs cumin
    3 tbs chili powder
    2 dried bay leaves
    2 tsp cayenne powder
    1 tbs smoked paprika
    2 cloves finely minced garlic
    1 medium onion diced
    2 tbs fresh ground black pepper



Directions

Sort and soak beans overnight. Soaking overnight helps to remove the "gas" in the beans.

Remove from water and rinse will. Place beans in a slow cooker.

Turn slow cooker on low and place in diced onions, minced garlic, seasonings, water and bouillon base.

Allow to cook for 4-6 hours. Adding water if necessary to create gravy.

To create a creamier texture use a potato masher to mash some of the beans. At this point you may choose to add more seasoning.

Serve over hot rice. Makes 8 hearty servings.

    I used a low-sodium chicken broth instead of the water and beef bouillon and because of that, it needed a bit more salt. A little spicy for my kids, but my husband and I really liked it. I'll definitely make it again! - 2/25/10
