Ingredients

    20 ounces 93% fat free ground turkey
    1 cup good salsa like La Victoria
    1/2 cup eggbeaters
    1/2 cup old fashioned rolled oats
    1 tsp ground cumin seed
    1/2 tsp dried oregano
    1/2 tsp salt to taste

Directions

Mix all ingredients until throughly mixed. Fill muffin cups, which have previously been sprayed with Pam. Bake in a 350 oven for 45 minutes. Makes twelve meatloaf muffins..

Recipe can be doubled. These freeze very well.
