Ingredients

    Mix and set aside:
    1 teaspoon Xanthan Gum
    3/4 cup white rice flour
    1/4 cup Potato Starch Flour
    1/8 cup Tapioca Flour

    Cream Well:
    1/2 cup Butter
    1 cup firmly packed brown sugar
    Beat In:
    1 egg
    Grated rind of one orange
    1 teaspoon of GF vanilla
    1-1/2 cups of GF quick oatmeal
    1/4 teaspoon salt
    1 cup of your flour mixture

    Fold In:
    7 oz Gluten Free Chocolate Chips

Directions

Makes 34 - 2 inch cookies 1 per serving

Drop the batter from a teaspoon onto lightly greased and floured cookie sheet. Use 1/8 of a cup to flour cookie sheets.

Bake cookie in oven at 350 degrees for 10-12 minutes.
