Introduction

I got this recipe from www.sundaynitedinner.com. They're spicy and yummy! I used red onion instead of green onions and they worked great. You can also reduce the chili garlic sauce (or sriracha) -- it's very hot. I made these into mini crab cakes. If you make regular-sized cakes you'll get 6 servings of 1 cake.

The original recipe says to flour them and fry them. I sprayed the pan with olive oil cooking spray and baked them.

I also stuffed this into baby portobello mushrooms and they were terrific! Bake at 400 for 10 minutes.

Ingredients

    1 pound cooked crab meat (I used 1/2 lump, 1/2 special)
    3/4 c. panko bread crumbs
    1/4 c. 2% milk (you can use skim or 1%)
    3 tbsp mayonnaise
    2 tbsp cilantro, minced
    6 green onions, minced
    1/2 tsp salt
    1/4 tsp black pepper
    1 tbsp chili garlic sauce or sriracha
    Cooking spray

Directions

1. In a large bowl, combine crab meat, panko, milk, mayonnaise, onions, salt, pepper, and chili sauce. Moisten hands with water and form crab mixture into 12 small cakes (about 2-3 inches in diameter). Cover with plastic wrap and refrigerate for 1 hour so they are easier to turn when baking.

2. Heat oven to 400 degrees. Spray a cooking sheet with cooking spray. Places crab cakes on sheet. Bake for 10 minutes. Carefully turn each cake over and return to oven for 5-10 more minutes.

Makes 6 servings of 2 cakes.
