Introduction

Eggplant is sliced, brushed with olive oil and grilled or broiled. Top with your favorite ricotta filling, roll up, top with sauce and cheese and bake for 30-40 minutes. Ingredients

    1 whole eggplant, sliced 1/4 inch thin
    1 cup low fat ricotta cheese
    1 and 1/4 cup park skim shredded mozzarella
    1 egg
    3/4 cup - 1 cup marinara sacue
    italian seasonings

Directions

Pour about 1/2 cup marinara sauce in 8x8 baking dish. Place rolled eggplant bundles seem side down on top of sauce. Add rest of sauce and sprinkle rest of cheese. Bake covered for 30 minutes, uncover and bake additional 10-12 minutes. Makes about 11-15 roll ups. Serving size is 3-4 roll ups.
